Getting this custom 10 year aged pu-er tea cake has been a labor of love for our former purchasing manager, Dylan Smith. When it finally arrived, it did not disappoint. Dylan's tasting notes: "A light puckering bitterness that gives way to soft sweet notes through the infusions. This is coupled with hints of old vegetation and cooling minerality unique to a well aged tea."

Gongfu style tea brewing is a Chinese method that emphasizes maximizing the flavor and aroma of loose-leaf tea through multiple short infusions. It utilizes a higher leaf-to-water ratio and smaller brewing vessels like a gaiwan or Yixing teapot.

Step 1 — Prep the Teaware and Leaves1

Warm a Yixing teapot or a gaiwan with hot water, then discard. Add a generous amount of loose-leaf tea and for pu-erh quickly rinse the leaves with hot water.
Step 2 — Brew Short Infusions2

Steep the tea for a few seconds or up to a minute, pour into a serving pitcher, and then into small cups. Enjoy each infusion individually.

Continue multiple short steeps, slightly increasing the time with each round. Notice how the flavor evolves with each infusion.
