Korean Sejak, is a traditional Korean green tea derived from the tender first bud, and second barely opened tea leaves. Jak is short for Jakseol and simply means green tea. Sejak specifically is handpicked in the latter part of April, before undergoing a more uncommon production technique known as jeungcha. Jeung-cha technique is when the tea leaves are immersed in boiling water for just a few seconds before draining and hot wok roasting. Taste wise, there are a lot of subtleties going on; creamy, sweet, nutty, with a light and piny menthol effect.

Gongfu style tea brewing is a Chinese method that emphasizes maximizing the flavor and aroma of loose-leaf tea through multiple short infusions. It utilizes a higher leaf-to-water ratio and smaller brewing vessels like a gaiwan or Yixing teapot.

Warm a Yixing teapot or a gaiwan with hot water, then discard. Add a generous amount of loose-leaf tea and for pu-erh quickly rinse the leaves with hot water.

Steep the tea for a few seconds or up to a minute, pour into a serving pitcher, and then into small cups. Enjoy each infusion individually.
