Shou Mei "Longevity Eyebrow" white is a bolder tasting brew, due to using the lower down leaves which are more mature and thus more rich in fruity flavors rather than the more common floral tones. These leaves are simply withered and develop a variety of colors rang ing from white, black, green, and burnt umber. Gongfu style tea brewing is a Chinese method that emphasizes maximizing the flavor and aroma of loose-leaf tea through multiple short infusions. It utilizes a higher leaf-to-water ratio and smaller brewing vessels like a gaiwan or Yixing teapot.

Warm a Yixing teapot or a gaiwan with hot water, then discard. Add a generous amount of loose-leaf tea and for pu-erh quickly rinse the leaves with hot water.
Step 2 — Brew Short Infusions2

Steep the tea for a few seconds or up to a minute, pour into a serving pitcher, and then into small cups. Enjoy each infusion individually.
