Mao (downy haired) Feng (Summit) indicates young tea leaves plucked early in the season and grown at a high elevation. Hence the nickname "Downy Tips". While being an affordable tea, you can easily discern some of the difference of not having a second drying/ baking, especially compared to other tea in this price range. There is welcomed freshness to the brew as well as a light and sweet taste.

Gongfu style tea brewing is a Chinese method that emphasizes maximizing the flavor and aroma of loose-leaf tea through multiple short infusions. It utilizes a higher leaf-to-water ratio and smaller brewing vessels like a gaiwan or Yixing teapot.

Warm a Yixing teapot or a gaiwan with hot water, then discard. Add a generous amount of loose-leaf tea and for pu-erh quickly rinse the leaves with hot water.

Steep the tea for a few seconds or up to a minute, pour into a serving pitcher, and then into small cups. Enjoy each infusion individually.
